Memorial Day Grilling Ideas
There’s nothing like a backyard barbecue to celebrate Memorial Day weekend. In fact, it is the official opener to grilling season for my family. Every year I look forward to trying new recipes and techniques as much as I love making my tried-and-true recipes. Either way, I'm not heating up the house by cooking inside. That's the why grilling is so great!

Ways the Kids Mess with Me: Reason Numero Uno
"It's like it's the Great Depression and syrup is scarce. I have to utilize every drop."
These were Vance's comments one morning last week, obviously not happy about the amount of syrup that I had poured onto his waffles. I've never heard him use the word scarce much less talk about the Great Depression, so there you go. Proof that he's learned something this school year.
And then there's this, which may be hard to tell from the picture, but it's a twisty tie on a bread bag that isn't twisted but tied in a knot to close. That's right, tied in a knot. I don't know if they're trying to mess with me or if they've forgotten the basics of life, but I can't tell you how frustrating it is when I'm trying to make lunches in the morning and can't figure out how to unlock the bread. I untwist this way, nope! I untwist the opposite way, nope! It's the Fort Knox of bread bags! When I start making a "Ways the Kids Mess with Me" list, this is going to be number one. Count on it to grow quickly because school's out in just two and a half days.

Let There Be Light!
Sometimes, when trying to fix one situation, you create a whole new situation. Our current situation is having 3 coordinating light fixtures, which to some isn't a situation at all, but I never intended things to be this matchy matchy. That's what happens when you change light fixtures one at a time without a clear vision. I have 2 fixtures left to pick out on the main floor (kitchen pendants and a foyer chandelier) and I MUST change things up a bit.

Love to Cook, Hate to Plan: Weekly Menu 5/11-5/17 (Week 7)
Tuesday is our crazy night of the week, so diner's choice!
On Wednesday I'm going to make slow cooker honey sesame chicken. I was on the fence about it when I first made it, but it was so good we're going to try it again! About an hour before eating I throw a few handfuls of frozen broccoli into the crock pot and mix it together, that way I don't have to dirty another dish.
Thursday is salad night and I'm planning on chopping up a ton of veggies and letting everyone make their own. Tomatoes, cucumbers, carrots, white beans, sunflower and pumpkin seeds, feta, and whatever else we have on hand. My current favorite vinaigrette can be found here. (If you don't have champagne vinegar, red wine vinegar will work just fine.)
On Friday we'll eat out and on Saturday we'll make pizzas.
Slider Sunday's have become a thing because it's an easy way to end the weekend. (Vaughn turns her nose up at a full size burger but will eat a mini version. Kids!) Beef for the family, veggie for me. I like Hilary's bean burgers but am thinking it's time to venture out and try something new. Let me know if you have a favorite veggie or bean burger!

Love to Cook, Hate to Plan: Weekly Dinner Menu 5/4 - 5/10 (Week 6)
Happy Tuesday and Cinco de Mayo everyone! I was too busy celebrating Vaughn's birthday and forgot to post the weekly menu. Here's what I have planned for this week!
On Monday I'm carrying over Vaughn's birthday dinner. (We had a late lunch on that day and no one was hungry for a big dinner, so we technically had cake and ice cream for dinner. A birthday girl's dream come true!) She chose buttered noodles, calamari, and caesar salad.
Tuesday is Cinco de Mayo so we're having enchiladas, guac, and rice. I found the enchilada recipe in the newspaper way before I had kids and I haven't made it in 9 years or so. I stumbled across it and figured it was a great time to make it again. Hoping it's as good as I remember! (I'll post about it soon!)
Everything happens on Wednesdays for us. Vance has a baseball game and Vaughn has a softball game, dance, and soccer practice. Unfortunately, we cannot be in 4 places at once, so we have to choose. It's a crazy night and we all just grab something as we scatter out the door.
Thursday is Indian night, which we haven't had in some time. I'll simmer chicken in Trader Joe's curry simmer sauce, roast cauliflower, and serve naan to scoop it all up with.
Friday, of course, is pizza night. I'm planning on doing homemade again and will sauté some veggies and grate some cheese. Hoping for a nice night so we can dine al fresco!
On Saturday, we're going out for dinner with our baseball family after Vance's game.
Happy Mother's Day on Sunday! I have no plans to cook, so we'll see what Justin and the kids come up with.
